What can I do to change the look of my formica cabinets without having to replace them?

Dear Pam;
Unfortunately, not much. The good news, however, is that you can overlay formica over the old stuff.
Your formica is glued to the countertop with contact cement. Since formica is designed to "grab" contact cement, the same process can be used to lay new formica over the old.
The job is done by taking out the sink, sanding the old surface to rough it up, and then installing the new surface.
If you have never worked with formica before, it might be a good idea to have a professional do the work. It may not be as expensive as you might think. Why not get 3 bids from qualified installers and see if the job is within your budget?
